Banana Flapjacks

A great no refined sugar snack or breakfast alternative. Keeps well for a couple of days in an airtight container or 3-4 days in the fridge. Adapted from a mumsnet recipe:

2-3 ripe bananas (1 cup or about 200g)
1 cup raisins/chopped dates or sultanas (200g)
2 cups gluten free oats (200g)
1/3 of a cup oil (80ml)
1 tsp vanilla essence or 1 tsp ground cinnamon

Mix all the ingredients. Place in an 18cm greased or silicon square tin. Cook in a pre-heated oven at 180 degrees for 25 minutes. Leave in tin to cool. Score while still warm.

To make it yummier for non babies, melt some dark chocolate and spread over. Allow to cool.
