These fluffy pancakes freeze well between sheets of parchment paper and are easily defrosted in the microwave. I serve them with apple purée and mashed banana for little monkey and add a dollop of golden syrup or agave nectar for non babies! Flaxseed powder is available in most health food stores. If you are not allergic to egg, just replace the flaxseed mixture with one beaten egg. Makes about 15 pancakes

1.5 cups self raising gluten free flour
1 tsp baking powder
1.5 cups non dairy milk
1 tsp vanilla
1 tablespoon flaxseed powder mixed with 3 tablespoons water
1 tablespoon oil

Mix flaxseed with water and set aside to thicken. Mix rest of the ingredients and add flaxseed mixture should be like a thick batter. Ladle spoonfuls into a slightly oiled frying pan. Once they start bubbling around the edge, turn over using a spatula. Serve while still slightly warm.
